Chile Lime Shrimp, Pear, and Corn Salad

While summer is officially over, the weather here is still warm so we’re savoring some final summer salads featuring the best fruits and vegetables of the season. Tonight we enjoyed a chili lime shrimp, pear, and corn salad and it didn’t disappoint. Loaded with good for you ingredients, this salad will fill you up and leave you satisfied.

Ingredients

Shrimp

20 large shrimp

Trader Joe’s Chili Lime Seasoning

1 Tablespoon Extra Virgin Olive Oil

2 cloves Crushed Garlic

Pinch of Sea salt

Pear Salad Dressing

1 Cooked Pear

3 Tablespoons Lime Juice

1 Tablespoon White Vinegar

1 Tablespoon Maple Syrup or Honey

2 Cloves Garlic

Salt

Pepper

Salad

1 Bag Arugula (about 4 cups)

2 Cooked Ears Corn on the Cob

1 Avocado Sliced

1/2 Red Onion

2 Cooked Pears



Instructions

  1. Preheat over to 400 degrees

  2. Place shrimp, olive oil, and garlic in pan. Coat with Trader Joe’s Chili Lime Seasoning (or similar).

  3. Place in the oven for 30 minutes or until done.

  4. Slice and peel all pears. Slice and place these in pan and drizzle with honey.

  5. Place pears in over for 30 minutes.

  6. While the shrimp and pears are cooking, wash arugula and place in a bowl. Add red onion, and slice corn off the cob and add.

  7. Once the pears and shrimp are done, take them out of the oven to cool.

  8. Place 1 full pear and all salad dressing ingredients into blender and mix. Season with salt and pepper to taste.

  9. Once pears and shrimp have cooled, add to salad.

  10. Add dressing and toss.

You could also BBQ the shrimp and pears for some added flavor.
