This is one of my all-time favorite low-carb dinner recipes. It’s super quick and easy, and the salmon can be cooked indoors or out. It takes about 15 minutes to make so it’s great for a busy Monday night.
We love garlic, so we add a bit more than is listed below in the ingredients but that’s the beauty of this recipe - you can adjust any of the ingredients based on your taste and it will still be great. Share below in the comments if you make adjustments you like so I can try them, too!
Ingredients
1 diced avocado
3 diced tomatoes
1/3c chopped red onion
3 cloves minced garlic
2 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
salt and pepper to taste
fresh basil to taste
Directions
Place salmon fillets in foil packet with a tablespoon of olive oil, some salt and pepper. Close packet and place on grill to cook.
While salmon is cooking, mix all other ingredients in bowl. The flavors come together as this sits.
The salmon should take about 10 minutes to cook (depending on the thickness of the cut). Take off grill and plate.
Place salsa over the top of salmon and serve.
