What's For Dinner Mom? Week of April 28 - May 4, 2019

You all know how much I love that phrase and I suspect it’s high on your list as well, right? OK, maybe not. That’s why every weekend I take 30 minutes and plan out our meals for the week. This way everyone knows what we’re having, can provide input, and can pitch in and help out when I’m running late from the office. Additionally, it allows me to build my grocery list so I’m only buying what we need. This means I’m not spending as much at the store and the food I’m buying will be eaten. It’s a win/win!

I love this recipe for greek lemon chicken skewers with tzatziki sauce! A few simple ingredients that likely are already in your pantry turn chicken from ordinary into something pretty amazing. The Tzatziki sauce is easy to make or if you’re running low on time, buy the pre-made tzatziki from Trader Joe’s. Serve this with cauliflower rice and a big salad and you’ll have an incredible Sunday night dinner that even your pickiest eater will enjoy!

Monday’s are low carb days for my FASTer Way groups so I am always on the hunt for something quick, easy, high fiber, and low carb. This recipe for Egg Rolls in a Bowl perfectly fits the bill. This comes in at 6 net carbs! And if you don’t like ground pork, you could replace it with ground chicken, turkey, tofu, or even scrambled egg. This takes less than 20 minutes to make and will be a crowd pleaser!

This is one of my all-time favorite recipes. It’s another low carb day for my FASTer Way to Fat Loss groups and since it’s also Taco Tuesday, I’m always on the search for a delicious taco option. Enter the chipotle salmon taco. The salmon is quick and easy to make (amazing flavor). Top this with sliced avocado and some sliced cabbage for crunch, some salsa or Tapatio and you are good to go. To keep this low carb, opt for a low carb tortilla option or place the salmon over lettuce for a taco salad.

Wednesday Night

Wednesday nights tend to be busy in our house so I’m always on the lookout for an amazing slow cooker recipe. And this one fits the bill. Slow cooker pernil, or puerto rican pork, is about as good as it gets. Super tender, full of flavor and oh so easy to make before heading off for a day at the office. You’ll marinate the pork overnight and then simply put it into the slow cooker the next morning and turn it on. Nothing more. Serve this over quinoa, brown rice, or sweet potatoes for an incredible dinner!

Thursday Night

Who doesn’t love a burrito? Thursday night we’ll be making these sweet potato, mushroom, and black bean burritos. Loaded with good for you carbs, these will quickly fill you up and keep you fueled through your fast Friday. Use your leftover brown rice and sweet potatoes from Wednesday and this dinner doesn’t get any easier to make! Plus, if you have picky eaters, they can make whatever kind of burrito they want. Everyone is happy!

I LOVE pizza and just because I’m eating healthy doesn’t mean I’m giving it up. So on Friday night we’ll enjoy this chicken sausage pizza on cauliflower crust. These are the best cauliflower pizza crusts. Make sure if you use them you follow the instructions exactly. They easily burn so you will want to watch them! The kids make their own and I make mine and pair it with a huge salad. The perfect Friday night dinner!
