What's For Dinner Mom? Week of June 17, 2019

Summer is here! And with the warm weather who wants to spend time in the kitchen? Not me! So this week you’ll find easy summer dishes that will have you in and out of the kitchen in no time flat.

As you know, I’m a certified FASTer Way to Fat Loss coach and these recipes easily fit within my macros and keep me on plan to reach my own personal goals. If you’re doing the FASTer Way and need help with meal ideas, let me know in the comments below. I’m always happy to help.

As with all of my weekly meal plans, proteins can be swapped out if you don’t like the protein in the recipe. I’m a pescatarian so if we’re having pork or chicken, I will usually substitute it for some white fish. As a note, I try to keep my tofu consumption low - soy is one of the most genetically modified foods and is not healthy for women.

Monday

If you’ve followed me for long, you know that salmon is my protein of choice. I love that you can cook it just about any way, with any flavors, and it tastes delicious. It’s tough to get it wrong and with a little creativity you can make some amazing meals. Monday is a low carb day for my FASTer Way clients so tomorrow we’ll be making these salmon skewers. With just four ingredients, dinner doesn’t get much easier. Make sure you make the basil vinaigrette, too! I will have this with a salad and we’re set to go. Enjoy!

Tuesday

It’s another low carb day so what could be easier or better than this 5 Ingredient Spicy Pork. You have all the ingredients in your kitchen already, you simply place the five ingredients in a jar and shake. Then let that pork marinate for 30 minutes and cook. Easy peasy! Serve this with cauliflower rice and a salad to keep it low carb. Or have this on a regular macro night with quinoa and carrots or sliced sweet potatoes.

Wednesday

On Wednesday’s we eat carbs. And lots of them! And one of the best ways to get those carbs in? Sweet potatoes. So on Wednesday we will make these summer bliss bowls with sweet potato falafel and jalapeno ranch. Use your favorite ingredients in your bowl. Yum!

Thursday

Is there another fruit that screams summer as loud as a peach? Peaches are an absolute favorite of mine and a dinner recipe that includes them is a no-brainer for me. Sign me up! Thursday night we’ll be making this one-pot peach basil chicken for dinner. From start to finish, this one takes about 40 minutes but is so worth it! Serve with quinoa or brown rice. Or top your favorite salad with it!

Friday

I love a good cobb salad and if you watch my stories on Instagram, you know I eat them for lunch almost every Monday and Tuesday. There is just something about the egg, avocado, shrimp, and cheese (I use goat) that make me smile. So when I found this recipe for a Sun-Dried Tomato Chicken and Avocado Cobb I knew I needed to try it. It’s AMAZING and the perfect Friday night dinner (or would be great on a low carb day for my FASTer Way clients).

Saturday

Yep, we’re doing another cobb salad on Saturday night, too. We’ll be celebrating a birthday in our house on Saturday (one of my kids) and I know we’ll BBQ some steak (his favorite dinner). Since I don’t eat steak, I’ll be making this easy Mexican Cobb. This takes about 35 minutes to make and is the perfect Saturday night dinner. Don’t like shrimp? If you’re BBQ’ing like us, you could easily top this with carne asada, grilled chicken, or fish!
