What's For Dinner Mom? Week of June 2, 2019

I know all of the mom’s out there can relate when I say that the end of the school year is crazy. Between finals and field days, pool parties, and the rush to the last day, I find us running the final weeks of school. And this year is even busier with my youngest set to wrap up his middle school experience this week. My parents are in town this week and we have luncheons, award ceremonies, parties, and graduation itself so dinners need to be quick, easy, tasty, and fit for company.

Remember, proteins can be swapped out if you don’t like the protein in the recipe. I’m a pescatarian so if we’re having pork or chicken, I will usually substitute it for some white fish. I try to keep my tofu consumption low - soy isn’t the best product for women.

Image and Recipe: Half Baked Kitchen

One sheet pan dinners are a favorite around here. Load everything onto the pan, set in the oven, and go. It really doesn’t get much easier. So tonight we’ll be having this Sheet Pan Chicken Shawarma. Chicken, sweet potatoes, arugula, lemon, and hummus come together to form the perfect dinner. It takes about an hour to make and can be made ahead (meal prep).

One of my favorites. And if you’ve been looking at my meal plans for any length of time, you’ve already seen this dish, Grilled Salmon with Avocado Salsa. Other than chopping everything for the avocado salsa, this dish takes very little time to make. And because of that, it’s the perfect low carb dinner option for my FASTer Way clients. The salmon and avocado are loaded with good-for-you healthy fats and this dish comes in at roughly 6.5 net carbs. Enjoy with some cauliflower rice or a salad and you are ready to go!

Tuesday

We love tacos so rarely a Tuesday goes by that the menu doesn’t include tacos of some sort. And because it’s a low carb day for my FASTer Way clients, we’ll do them without shells - replace them with head lettuce leaves for a tasty alternative. Lettuce wrap tacos are super easy to make and allow you to enjoy one of the best meals around even while lowering your carbs. These come in at roughly 4 net carbs.

It’s going to be HOT on Wednesday so we’re going with this delicious Asian Chicken Slaw from one of my favorite food bloggers, What’s Gaby Cooking. This recipe is the perfect blend of healthy protein, fats, and carbs, looks fabulous and will keep your guests coming back for more. For my pescatarian friends, you could use Sea Bass or Halibut, Tilapia, or even Salmon as a great alternative.

Another one of my all-time favorite salads is on tap for today. The Loaded Sesame Salmon salad is quick and easy to make (thank you pre-packaged salad mix!) and has absolutely the best flavor. It looks gorgeous on a platter and would be an amazing dish to bring to a get-together with family or friends. Take off the mango and this would be another great low carb dinner option for my FASTer Way clients.

Today is graduation day for my eighth grader and we’ll be running from ceremony to ceremony (one morning and one evening) so I need to get a good lunch in to hold me over until dinner out. So I’m sharing one of my favorite ways to break my fast, Raspberry, Banana Overnight Oats with Almond Butter. Sounds like an odd combination but rest assured, this is pure gold. The recipe makes enough for multiple servings so I will usually enjoy this a couple of days in a row. And it packs easy for work lunch!

Saturday

To cap off a week of activity, we’re going to BBQ burgers on Saturday. While the rest of the family enjoys a real burger, I’m having one of these Beyond Meat Beyond Burgers. For those that don’t eat meat, these are seriously amazing. Not quite the taste of real meat, but pretty close! Personally, I love the Impossible Burger but they don’t sell them in stores in California…just at restaurants. We’ll pair this with cauliflower ‘potato’ salad (seriously amazing) and a salad and enjoy the start of another amazing summer!
