What's For Dinner Mom: Week of August 15, 2021

After a brief hiatus, my popular “What’s for Dinner Mom” series is back. As the kids head back (or off) to school and summer starts to wind down, many of us are looking for a bit of structure around mealtime and that means knowing what you’ll be having before the day begins. Weekly I like to share what we’ll be making for dinner in our house. Recipes are fresh, healthy, simple, to the point, and and don’t take serious prep work because let’s face it, none of us have the time. Join me!

If I have information regarding nutritional values, I’ve included them below. I loosely follow the FASTer Way food cycle of two days of low carb followed by regular macro days. If you’re not carb cycling or don’t care about macros, feel free to mix things up.

Please also note that we either have leftovers or eat out once a week. I’ve put that on Saturday but often it’s on Friday. Feel free to change things around to suit your own schedule.

Weekly Menu: What’s For Dinner August 15, 2021

Sunday

I like to make a nicer dinner on Sunday nights and this week we’ll be having this Mexico Adobo Grilled Pork Tenderloin. This recipe is from the book, Simple Food, Big Flavor by Aaron Sanchez. If you’re a fan of Chopped you’ve seen him there. Pork tenderloin is super lean and this takes on the adobo flavor well. Serve this with cilantro lime rice or a salad. And if you’re watching your carbs, this would be a great low carb dinner option as it’s only 3 carbs.

Monday

Monday nights are busy in our house. Soccer practice in a city 20 miles away immediately after school means we’re not home until 6pm at the earliest. Dinner needs to be quick. So Monday we’ll be having Coconut Red Curry Shrimp Skewers. I work from home so I will marinate the shrimp between meetings at some point. If I was heading into the office, I would marinate them before getting in the car. If you don’t have time to grill, you can pop these in the oven. Serve the skewers with a big green salad.

Tuesday

Taco Tuesday is definitely a thing in our house. To keep it interesting, we try to mix things up so Tuesday I’ll be doing this Low Carb Taco Salad from Low Carb Maven. I keep all the ingredients in separate bowls so each person in our house can customize/make a salad to their own liking. And if they don’t want salad, they can always grab a taco shell and make a regular taco.

Wednesday

One of my favorite dinners, Chicken Shawarma Bowls. This is one of the simplest dinners to make with one caveat, you need to marinate the chicken. I do this either first thing in the morning or even the night before while my husband does the dinner dishes (one cooks, the other cleans). Otherwise, this recipe is as simple as it gets.

Thursday

I love a good green salad so on Thursday I’ll be making Erin’s Peach & Avocado Green Salad. For the meat eaters in our house, they can add any leftover pork tenderloin, shrimp, or chicken from the previous nights to their plate.

Friday

Friday night is pizza night! We recently purchased an Ooni Koda 16 pizza oven (it’s a splurge but we had a gift card and a 20% discount) and it’s finally arriving this week. It’s been backorded since the beginning of June so we’re looking forward to finally receiving it. I cannot wait to try out this recipe for Grilled Peach and Prosciutto Pizza. Serve this with a salad, a little white wine, and this is a perfect summer dinner.
