What's for Dinner Mom? Week of June 5, 2022
Summer is here! The weather is finally warming up and the kids are home. And that means they’re asking me my favorite question - "what’s for dinner, mom?” a bit more frequently. Dinner this week is full of family favorites including pulled pork sandwiches, grilled salmon with avocado salsa, and some simple salads - perfect for those warm nights.
If you’re new here, all recipes are quick and easy to make. I don’t like spending hours in the kitchen prepping dinner so all recipes are ready in 30 minutes or so. They also use ingredients you likely already have in your kitchen and don’t require any fancy equipment. All recipes are user-friendly, too. That means you can swap vegetables out for whatever you like, and protein, too. Don’t like salmon? Use chicken or flank steak. Use whatever you have in your kitchen.

Weekly Menu: What’s For Dinner Mom? Week of June 5, 2022
Sunday
Sunday night I’ll be making a family favorite, pulled pork sandwiches. This recipe couldn’t be easier, especially if you have a slow cooker. I buy pork tenderloins when they are on sale and put them in the freezer. And when I know the day will be busy, I’ll put them in the slow cooker and make them for dinner. I serve them on Hawaiian rolls (Trader Joe’s has great ones) and make a crunchy salad and dinner is served. I will also make these if I’m having a crowd for dinner.
Monday
Monday night we’ll be making one of my favorite dinners, Grilled Salmon with Avocado Salsa. This is one of the simplest meals to make and everyone loves it. Simply lightly season the salmon and put it on the grill (or stove). Once cooked, top with the avocado salsa. Pair this with a simple green salad and you have a great dinner! And if you’re watching your carbs, this is the perfect dinner.
Tuesday
Does everyone do Taco Tuesday? We did and I think we got a little burned out on tacos so we haven’t had them on the menu for a month or two. But this week we’re back. We’re doing old-school ground beef tacos (it’s what the kids like) and I’m swapping out the shell for a salad. And since I don’t do red meat, I’ll add leftover salmon from Monday night. Easy! And if you’re looking for a taco salad recipe, this one from Wholesome Yum is great!
Wednesday
My kids love teriyaki so Wednesday we’ll be making chicken teriyaki with asparagus rice bowls. If you can’t find or don’t like asparagus, simply swap it out for your veggie of choice. Honestly, I grab whatever veggie we have in the refrigerator and use it. Broccoli, green beans, mushrooms, zucchini. They all work. And if you don’t have a favorite teriyaki recipe, this one from SkinnyTaste is great. Make some brown rice while this is cooking and when ready, add it to a bowl and top with the chicken teriyaki mixture. Delicious!
Thursday
A heat wave is headed our way so I’m wrapping up the week with salads. Thursday I’m planning on making the Mango Chop Chop Salad from What’s Gaby Cooking. It is seriously delicious and it will be on our dinner rotation all summer long. I will add grilled flank steak for the kids and leftover salmon for me. Delicious!
Friday
We have a birthday in our house this week so I’m planning a little nicer Friday night dinner. We’re going to have this Roasted Nicoise Salad with Halibut and it’s incredible. This is a sheet pan dinner so prep is super easy and the flavors come together in a magical way. Don’t forget to roast the artichokes - they are incredible!
Saturday
Saturday night we’ll be making BBQ chicken pizza in the Ooni! This is such a great recipe from What’s Gaby Cooking. I buy pre-made pizza dough at Trader Joe’s and a rotisserie chicken at my neighborhood store. That makes prep super easy and then it takes no time for this to come together. I’ll pair this with a salad (the mango chop chop would be perfect).
