What's for Dinner, Mom? Week of July 9, 2023

Summer is the best! With all the amazing fruits and vegetables that are in season and the incredible weather, it’s easy to take dinner prep outside and enjoy all that summer has to offer. The menu this week fits my macros and includes some of my favorites - chipotle chicken salad, shrimp fajitas, and a shallot and goat cheese pizza.

If you’re new here, all recipes are quick and easy to make. I don’t like spending hours in the kitchen prepping dinner, so all recipes are ready in 30 minutes or so. They also use ingredients you likely already have in your kitchen and don’t require any fancy equipment. All recipes are user-friendly, too. That means you can swap vegetables out for whatever you like and protein, too. Don’t like salmon? Use chicken or flank steak. Use whatever you have in your kitchen.

Weekly Menu: What’s for Dinner, Mom, for the week of July 9, 2023

Sunday

I like to make a nice dinner on Sunday night, sit around the table, and spend a little extra time with my family and friends enjoying the last moments of the weekend. This week I’ll be making this Santa Maria TriTip from What’s Gaby Cooking. It’s the perfect summer recipe and a crowd-pleaser. Serve this with a cucumber salad and corn on the cob, and everyone will be happy.

Monday

If you’re new to following me, I like to do low-carb dinners on Monday and Tuesday nights (combining that with high-intensity cardio), so on Monday night, I’ll be making this Chipotle Chicken Salad from Skinnytaste. This recipe has 2 carbs and can easily be customized for a picky eater not wanting salad (don’t shred the chicken and have it with some of the veggies). This is also a great recipe for anyone who works all day because it doesn’t take a lot of time to make.

Tuesday

Tuesday night, we’ll be enjoying these Sheet Pan Shrimp Fajitas from EatWell101. I love a sheet pan dinner since you literally put all of the ingredients on one pan, put it in the oven, and cook. Serve these with low-carb tortillas if you’re watching your carbs (these are delicious), and a salad and dinner is served.

Wednesday

We’ll be BBQ’ing again on Wednesday (why not?), and I’ll be making Grilled Chicken Sandwiches from a Pinch of Healthy. It truly doesn’t get much easier than this recipe. Simply grill your chicken and top with your favorite veggies. For a twist, you can marinate the chicken and grill. A family favorite is teriyaki, topped with a thin slice of pineapple. Yum!

Thursday

If I’m being honest, more often than not, we do leftovers on Thursday night. If not, we’ll be enjoying this meatless recipe from Epicurious. Featuring sweet potatoes and mushrooms roasted to crispy-edged perfection, plus a whipped feta-tahini sauce with lots of dill, this easy, comforting vegetarian dinner is perfect any time of the year.

Friday

Friday night is pizza night in our house. We fire up the Ooni and make an assortment of pizzas to satisfy hungry teens and adults. This Caramelized Shallot and Bacon Goat Cheese Pizza from Half Baked Harvest is on the menu this week.

Saturday

We either eat out or enjoy dinner with friends, so I don’t include Saturday in the meal plan.
