Pumpkin Spice Overnight Oats

Try as I might, I just cannot get into the pumpkin spice craze. At this time of year, it’s EVERYWHERE so when I saw this pumpkin almond milk at Trader Joe’s I thought I’d give it a try. I knew I didn’t want it in coffee (I think I’m the only person who isn’t a PSL fan) and really didn’t have any idea how to use it until one night I was making my overnight oats and didn’t have any fruit. I thought I’d use the pumpkin spice almond milk instead as an experiment. What’s the worse that could happen?

I was a little nervous opening up the jar for that first bite but wow, what an amazing surprise. The almond milk adds just enough flavor that you can still taste the banana in the base, without it overpowering the oats. It’s not a crazy strong pumpkin flavor nor is is too much spice. It really is a mellow milk and boy is it good.

I’ve now made these a couple of times and each time I am thrilled with how they come out. That is the true beauty of the overnight oat. Once you have a solid base, you can add whatever you’d like and make the most amazing combinations.

So, if you’re like me and can’t embrace all things pumpkin spice, give these a try. You’ll be happy you did.

Pumpkin Spice Overnight Oats

At flavorful twist on your standard overnight oats. Even if you're not a fan of all things pumpkin spice, you will be a fan of these. Slightly sweet, slightly spicy, and not at all fake tasting. Enjoy!

Ingredients

  • 1 Ripe Banana
  • 1 carton Kite Hill Plain Almond Yogurt
  • 1 1/4c Trader Joe’s Pumpkin Spice Almond Milk
  • 1c Gluten Free Oats
  • 1 Tablespoon chia seeds

Instructions

  1. Mash the banana in a bowl and add the yogurt and almond milk. Mix well.
  2. Add the oats and chia and mix.
  3. Pour half the mixture into one glass jar and cover. Repeat in the second glass jar.
  4. Place in the refrigerator and wait.
  5. Take them out the next day for breakfast or lunch.
