When I found out I was allergic to eggs I thought I’d never be able to eat another baked good. It was a sad, sad day. But thankfully, I was wrong. There are so many different egg substitutes for baking so whether you’re allergic, vegetarian, or avoiding eggs for any other reason, you’ll enjoy baked goods and the substitutes are so good, that you’ll never know they’re missing.
In this post, I’ll share the different substitutes and when and how to use them. The most common uses of egg substitutes include applesauce, banana, tofu, ground flaxseed, yogurt, buttermilk, sweetened condensed milk, and my favorite, sparkling water.
Which one you choose to use will depend on the recipe and the purpose of the egg. Of course, you won’t be able to replace eggs in something like a custard, but for most baked goods, there are options.
How Much Egg Substitute Is Needed?
One egg is roughly 1/4 cup so your egg substitute needs to equal the amount of egg you are leaving out. If a recipe calls for two eggs, you’ll need 1/2 cup of the substitute.
Baking Cookies? Try These Egg Substitutes
Who doesn’t love a good cookie? I love cookies and I was crushed thinking I’d never enjoy one again. But using these substitutes, I can still enjoy them and honestly, nobody in my house misses the egg.
1/4 cup carbonated water (plain, no flavor) = 1 egg
1 tablespoon ground flaxseed + 3 tablespoons of water = 1 egg
1/4 cup sweetened condensed milk (I find this makes the cookies sweeter, so you may want to reduce the sugar just a bit
Using Flaxseed as a Substitute
If you are going to use flaxseed as your egg replacer, grind the flax seed in your clean coffee grinder. Once ground, mix the flaxseed with water and let it stand until its gelatinous.
Baking Brownies or Blondies? Try These Egg Substitutes
1/4 cup carbonated water = 1 egg
1/2 banana, mashed
1/4 cup applesauce (this can make them sweeter)
1/4 cup tofu
1/4 cup yogurt (this is my favorite)
1/4 cup buttermilk
Using Tofu as a Substitute
If you’re using tofu, add the appropriate amount to your blender and blend until it is completely smooth and creamy. Once you’ve done this, it’s ready to go.
