When you preplan, you know what you're eating, when, and if it fits within your macros. As a result, you're much more likely to stay on track and reach those goals. Today on the blog I'm sharing some of the recipes from my personal weekly meal plan.

That said, I find my clients struggling sometimes to figure out what to eat. Staring in a full refrigerator can do that sometimes, can’t it? So I share what I’ll be eating each week to spur their creativity and give them some additional options.

Monday Dinner
One of my favorites, Garlic Shrimp with Coconut Milk and Tomatoes. This has seven net carbs, amazing flavor and takes very little little time to make. I pair this with cauliflower rice and a salad for dinner and then enjoy a little freezer fudge for dessert. Yum!
Tuesday Dinner
I LOVE salmon and, on average, eat it twice a week. One week my husband decided to make salmon tacos and OMG it’s seriously one of the best things around. Add some avocado, a little lime, some red onion, some cabbage for crunch, and a drizzle of Tapatio or TJ’s Sriracha Ranch and you are set. To keep this low carb, I use low carb tortillas.
Wednesday Dinner
Wednesday’s are busy in our house and we’ve come to rely more and more on the slow cooker. Wednesday we’ll enjoy some Slow Cooker Chicken Tikka Masala over quinoa. Spend 15 minutes before work putting everything together and come home to an amazing dinner! And while I don’t eat chicken, I will bake some tofu and enjoy the tofu with the Tikka Masala. Delicious! We add a kale salad and this is the perfect dinner to close out a busy day!
Thursday Dinner
Thursday night I have a work dinner so my husband will make dinner for the kids and they’ll be enjoying pork chops with garlic and thyme. They will pair this with some green beans and a salad for a well balanced dinner.
