What's For Dinner Mom? Week of August 29, 2021

Can you believe August is coming to a close? With only a few summer weeks remaining, my meal plan for this week takes advantage of all the summer fruit and vegetables. This week the menu includes grilled flank steak, salmon baked in foil, greek salad, falafel waffles, and more!

As always, my meal plan has a nice Sunday dinner, two low carb dinner options, and options to make dinner prep a little easier. Pour yourself a drink and let’s make dinner!

I love making Sunday dinner with my family and while I am craving pasta, it’s just too warm here to spend all that time in the kitchen over a stove. So Sunday we’ll be grilling this Grilled Flank Steak with Poblano Pico. This is one of the easiest recipes to make and the pico takes advantage of those tomatoes fresh from the vine. Pair this with some grilled corn on the cob and a salad and your family will be thrilled.

Monday nights are busy in our house so I’m always thinking of quick and easy dinners. Monday night we’ll be making one of my favorites - Salmon Baked in Foil. The foil keeps the moisture in, the salmon bakes evenly, and the end result is a moist, flakey fish with incredible flavor. Often I will simply place salmon in the foil, add some olive oil and a touch of salt and pepper, and cover the salmon with lemon slices. This literally takes 5 minutes to pull together and is great for a dinner with friends.

We love a good Greek Salad in our house and this is one of the best we’ve had. This is a great opportunity to use those final cucumbers and tomatoes from the garden. We like to make this ahead of time and let the dressing marinate the veggies. Always add the feta! And sometimes marinated artichoke hearts make an appearance, too! Serve this with grilled chicken or leftovers from earlier in the week.

Ever since I saw an Instagram post of Eggs Benedict made with a falafel waffle instead of English muffin, I’ve been dying to try this recipe. It doesn’t disappoint! I’m allergic to all things in the onion family and eggs, so I omit the onions, garlic, and cilantro and use soda water in place of the eggs (best substitute ever). And if you’re in a hurry, you can use the falafel mix from Trader Joe’s. Serve these with hummus, leftover cucumber salad, and leftover steak or salmon and you’re ready to go.

Cool pasta on a hot summer day? You bet! This Pesto Pasta Salad is fresh and delicious. Load it up with veggies from garden and you’re ready to go. Delicious!

It’s pizza day! Friday we’ll be enjoying this Grilled BBQ Chicken Pizza. I use the pre-made pizza dough from Trader Joe’s so we can make pizzas whenever we want. We will also use a rotisserie chicken from the store instead of cooking chicken but you could use leftover chicken if you’ve made it earlier this week.
