Cottage cheese is the star of this recipe and provides a creamy texture and rich flavor. While you can opt for a low-fat version, in my testing, the regular-fat cottage cheese provided better texture and flavor.
Honey provides the sweetener for the ice cream. You can use maple syrup or your preferred liquid sweeter, but I like the taste of honey with my cottage cheese best.
Powdered peanut butter provides the taste of peanut butter without the additional fat. I use PBFit Peanut Butter Powder.
Dates - chopping them into small pieces gives the ice cream some caramel flavor.
Add fresh strawberries or the fruit you love to make fruity ice cream. Add chocolate chips for chocolate chip ice cream. Get creative! The sky is the limit!
Cottage Cheese Ice Cream
Ingredients
- 16 ounces Full-Fat Cottage Cheese
- 1/4 cup Honey, maple syrup, or your preference of liquid sweetener
- 1/4 cup PBfit Powdered Peanut Butter
- 3 Pitted dates, chopped
Instructions
- Add the cottage cheese, honey, and powered peanut butter to a food processor or heavy duty blender (Vitamix).
- Blend until smooth and creamy. There shouldn't be any lumps.
- Fold in the chopped, pitted dates
- Place the ice cream in a freezer friendly, sealable container and freeze overnight (or a minimum of 5 hours).
- You will want to thaw it a little before serving. If you've frozen it for 5 hours, you can leave it on the counter for 5 - 10 minutes. If you froze this overnight, please leave it at room temperature for 15 minutes
