Ingredients

  • 16 ounces Full-Fat Cottage Cheese
  • 1/4 cup Honey, maple syrup, or your preference of liquid sweetener
  • 1/4 cup PBfit Powdered Peanut Butter
  • 3 Pitted dates, chopped

Instructions

  1. Add the cottage cheese, honey, and powered peanut butter to a food processor or heavy duty blender (Vitamix).
  2. Blend until smooth and creamy. There shouldn't be any lumps.
  3. Fold in the chopped, pitted dates
  4. Place the ice cream in a freezer friendly, sealable container and freeze overnight (or a minimum of 5 hours).
  5. You will want to thaw it a little before serving. If you've frozen it for 5 hours, you can leave it on the counter for 5 - 10 minutes. If you froze this overnight, please leave it at room temperature for 15 minutes
